This beautiful side dish recipe is one of my favorite things to eat—you’d never believe a plate of beans could taste so good! If you can’t find white beans, don’t worry: Regular green beans will work just as well.   MORE: Crispy Avocado Tacos with Sriracha Beans Prep Time: 2 minutesTotal Time: 12 minutesServes 2 1 c pine nuts 2 tsp coconut oil 2 cloves garlic, finely sliced ½ lb white or green string beans ½ c fresh sage 4 slices prosciutto ½ Tbsp apple cider vinegar ½ Tbsp maple syrup ½ c raisins 1 sm red chile, finely chopped

  1. Heat grill. Lightly toast pine nuts in skillet until fragrant, 2 to 3 minutes. Set aside.2. Heat 1 tsp of the oil and garlic in same pan. Add beans and season with salt and pepper. Reduce heat to low and sauté until beans are tender, 2 to 3 minutes. Transfer to serving dish, scraping out any browned bits of garlic.3. Return pan to heat. Add remaining 1 tsp oil and sage and cook until crispy, about 1 minute.4. Grill prosciutto until crispy, about 2 to 3 minutes per side. Remove from heat and let cool.5. Whisk vinegar and syrup and pour it over beans. Crumble prosciutto and add to dish along with pine nuts, raisins, and chile. Top with sage and serve.
