Brush cut sides of 4 steak rolls with olive oil. Toast in broiler. Meanwhile, heat a little oil in a small nonstick skillet over medium heat. Add a generous cup of precut onions and bell peppers, season with salt and black pepper, and cook until tender and browned. Divide about 3/4 pound of roast beef among bottom halves of rolls. Top with the vegetables. Put a slice of cheese on top halves of rolls. Broil sandwich halves until heated through and cheese browns slightly, about 2 minutes.
