1/2 tbsp butter1/2 ripe peach, (half diced, half large chunks)2/3 cup almond milk1/3 cup steel cut oats1/4 tsp cinnamon1 piece crystalized ginger (or 1/2 tsp fresh ginger)1/2 tsp vanillaPinch of salt1/2 tbsp brown sugar2 walnuts, chopped

What to do:

Melt the butter over a medium high heat in a small saucepan. Cook for 2 minutes, or until almost browned. Turn the heat down to medium, and add the large chunks of peaches. Cook for 3-4 minutes so the edges of the peach are browned and caramelized.Add the milk, and stir well. When the milk is almost boiling, add the oats, cinnamon, ginger, salt,  and vanilla. Allow to come to a boil, and turn down the heat to low.Cook for another 5-8 minutes, stirring regularly until the steel cut oats are at desired consistency.Stir in the brown sugar and walnuts, and serve with the diced peaches on top.
